Cooking in paper is the perfect tool for any foods that like to be steamed and I like nothing better than a great piece of fish. I decided that a whole trout would be my muse and wrapping it in the warm cocoon of parchment paper with a blanket of veggies would be perfect.
I found a recipe on YouTube. Rachel Khoo's, Little Kitchen in Paris had a very interesting marinade for trout en papillote and I took it from there. I used Rachel's recipe but changed out some of the ingredients, using leeks, carrots and broccoli. You can see my adapted recipe here. The completed dish was absolute heaven! The trout was perfectly done, as were the veggies that soaked up the steamy environment en papillote.
The marinade was lemony and not over powering at all. It also happened to be the most beautiful neon yellow color. Doesn't Mr. Trout look so happy? I think that he is smiling...can you see it?
Trout that is busting at the seams with garden yumminess, Hooray! I think it is time for this little gift to be wrapped up and steamed.

Since I was making this for a crowd I wrapped up a few more.
Then I started on my dessert en papillote. Pears are my favorite sooooooooo......
Peeled and cored, the pears were rolled in turbinado sugar and filled with the walnut and cranberry mixture before they were snuggled in their paper packets.
In the end the trout was perfect, moist and sweet with a hint of the lemon from the marinade.

I think it is time to talk about the pears. These stuffed pears were divine.

I don't like food that looks back at me, but I'm sure the fish was yummy.

He does look like a happy fish, tucked in nicely with aromatic seasonings and veggies. Nice take on the challenge.
This looks delicious - I did fish too. But I didn't experiment with en papillote dessert - but having seen yours, I really wish I had! One to try in the future. Great job.
I love the pear version, in fact I have some pears that I need to use up and this sounds like the perfect use for them.
