Whiskey for dinner can't be a bad thing!

Paul was gone at a gig and I used up the rest of his whiskey but I think he will be OK with it.
On Sundays I go to the grocery store and they had some fabulously thick, center cut pork chops on sale so I decided to do a special somethin' to our porky friends.

There is a great recipe in the America's Test Kitchen's The Best Simple Recipes and it was indeed fairly simple.  The chops that I got were about 2 inches thick so I did stray from the recipe a bit to make sure that they were cooked enough.  All I did was pan roast them to get some color and then finish them in a 400 degree oven.  The sauce was incredible with the shallots and the whiskey taste that was kind of sweet but not really.  The sweet potatoes were pretty good but I did doctor them a little more than the recipe calls for, I added a tablespoon of brown sugar and a 1/2 teaspoon of cinnamon.  If you have the opportunity you should definitely try this meal, it was a real winner.  I was right too, that my husband forgave the empty whiskey bottle when he had a belly full of the pork and sauce.



I also whipped up a batch of Toffee Chip Cookies.  If you have a sweet tooth, do not view the photos below.  Really, I mean it!  You can't say that I didn't warn you.

Did I mention that the recipe makes 5-6 dozen cookies?


I don't remember where I got this recipe because I have had it for a very long time.  They are really good and you can cook them for the full time and they will be crunchy or take 5 minutes or so off of the time and they will be chewy.  Perfect!
