Patty Cake, Patty Cake

Bakers.... Man I had a good time with this challenge!
Patties are a great way to improvise and use stuff that is just laying around your fridge.  I made a few different incarnations and really enjoyed all of them.  I did have two that will be on my food rotation because they were REALLY yummy.

The three patties that I made were:

A turkey, apple, leek patty with a lemon pepper cream sauce, a crab and artichoke couscous patty and finally a baked cremini mushroom patty with a garlic and sherry sauce.

First up was the turkey patty.  I had no plans to make a patty for the challenge but was literally just tossing a bunch of stuff I had in the fridge into a bowl with some ground turkey when I decided that I needed to taste this blob I made.  The best way to do that was to make a small patty and Voila!  Out came the camera and the challenge was off to a quick start.



I had been thinking about making a patty using couscous, mostly because I had it on hand and while
digging in my fridge found some crab meat.  Hmmmmmm?  A little more digging found a can of artichoke hearts and I thought that it sounded like a good combination.  I was off to the races!

This was a much more experimental patty and required a few more eggs than I thought, as well as some cheese to help bind and flavor.  These were fairly thick patties and, since the ingredients were all ready to eat when they joined the cooked couscous the pan frying time was just about creating a nice crust and heating them through.  I have included the recipe but you may have to play with the amounts because some of them are just a guesstimate.  These were really good but could use some work to be even better.

Finally, the best of the bunch was the mushroom patty and if I had made 100 I could have eaten them all. They were so tasty and tender they were completely irresistible and the garlic sherry sauce made them absolute perfection!  These will end up in my recipe book to be made on a regular basis.

What cleaver ideas! The cous cous one is very intriguing and I might have to do some experimenting with it myself. The mushroom patty looks like a meal in itself!

WOW you made three versions how wonderful and that mushroom one has my name on it I love mushrooms a wonderful job on this challenge and I LOVE how you used stuff that you had to hand which is exactly what the challenge was about making patties. Cheers from Audax in Sydney Australia.
