Our garden is in production mode so I am in experimentation mode.
In the heat of the midwestern drought, we have been watering our precious garden so that it remains lush and green while eveything else withers and dies and now we are harvesting the rewards. This was our first BIG reward! And I do mean BIG!
This zucchini weighs in at the same size as an average newborn, 18 inches long and 7+ pounds.
The monster has a sibling who is larger than the grocery variety but dwarfed by the big guy.
The big brut zucchinis were accompanied by two frilly girls, with one more dainty than the other. These are patti pan squash, which happen to be one of my favorites.
In my recipe book I have your standard "from the garden" recipes for breads, veggie lasagna and stir fry but I am always looking for something more interesting. My first opportunity to cook up some squash came when my 7 year old decided that spinning a giant patti pan squash on his finger like a basketball was the coolest thing ever. Needlesstosay, the poor patti pan was soon under the spell of gravity and she lost a bit of her frilly edge. Hmmmmm. Fritters sounded like a good way to make her pretty again.
I thought these were so much better made with patti pan than with zucchini. The patti pan are sweeter and creamier than zucchini so they make the fritters almost like a dessert.
The next day I opened my fridge and saw "The monster" just sitting there mocking me. "Look at me! I am huge and you can't make enough bread to use me up! HAHAHAHA" I commenced to hack off his taunting topside and this time made baked zucchini fries with a tomato sauce for dipping. I didn't have panko crumbs so I threw together italian bread crumbs and some seasoned flour. These turned out fantastic, even the kid loved them. They were so good that I didn't even have time to take any photos, so you will just have to trust me on this one.
But wait! The kale in our garden is turning into a hedge! We must eat kale!!
We have had kale in potatoes like Irish colcannon, we have sauted it with various other veggies and have topped pizza with it. It was time to try the new fad.....kale chips. This was easy and two huge pans didn't even last a couple of hours in our house of 3 people. That is a lot of kale that was consumed by everyone. I may have to make a ton of kale chips to be sure that we have them on hand more often.
