As the growing season comes to an end here in Wisconsin we are frantically picking apples, kale, tomatoes, squash and cucumbers. Now, I love ALL fresh vegetables and fruits but I have to admit that the apple is the all around winner in my book.
We have a tree in our yard but it has produced some pretty sad little apples in past years. This year we have hit the mother load in many ways. The tree received a huge pruning last fall after a devastating lightening strike and this spring brought the tree into the growing season with a far smaller area to grow apples. The apples that did grow are some of the finest that we have ever had. They are sweet and tart and some are the size of your fist...perfect!
This is just one of the hundreds of apples I have had the pleasure of working with over the last week. Here are some of what I did with these tasty apples.
When we use to go apple picking when I was young, I would wait to get the warm, fresh apple cider doughnuts that the orchard would make right there. I got a pan so that I could try out baked apple cider doughnuts. All I will say is that they lasted all of about 15 minutes. I used this recipe for my doughnuts and they were fantastic!
What next?
How about whipping up a quick apple pie? I Love apple pie but I have never liked pies with too much crust so I found a recipe for a Swedish apple pie and I do believe that I have found my perfect apple pie. Let me tell you that this is the quickest, easiest apple pie you will ever make. I threw in some beautiful blackberries in with the apples and it was delicious. The crust on this pie is reminiscent of a sugar cookie, is that wrong?
Doughnuts, pie and now I needed to do something that would use up LOTS of apple all at once, so I broke out two, count them two big crock pots and filled them to the brim with our little beauties.
After crocking for a day, straining out the skins and seeds, seasoning it up and then crocking for another day I had about 12 pints of delicious apple butter.
Oh my! I do love apple butter...on anything.
I have tons more apples to work with and will fill you in on what I come up with.
