Tempura, crab rangoon and coconut shrimp. These were some of what I whipped up on Friday because I had the urge and a little excess energy.
Isn't that broccoli beautiful? I love tempura and since I was making it, I figured that I might as well fry up a few more choice selections.
How about some crab rangoon? I improvised my own filling and it was really good. Crab, chives, garlic powder, cream cheese and a little milk to thin it out a bit. Max even ate it! I put a lot of crab meat in mine and some garlic chives from our garden. Wanna see? OK.

What else could I make? Hmmmmm. As I thought I remembered that I had bought some nice looking shrimp that were in the freezer. "How about coconut shrimp?" I wonder what is in coconut shrimp? So I tried to narrow down the ingredients: coconut, shrimp, and some kind of batter. I guess can just wing it. A little of this and a little of that.....and voila!
These were the products of Fry-t night, add in some rice and we were all good to go! Happy Fryday
